When in Cyprus, do as the Cypriots do. Learn to say the island’s name and its inhabitants correctly. The place isn’t that big. Stroll, don’t rush. Pontificate with your hands as well as your voice. Get accustomed to halloumi, a cheese made from a combo of goat and sheep’s milk. In the US we call it grilling cheese. When you take a coffee break, it will be dark, so dark that it comes with a glass of water. It is ordered three ways: plain, with one teaspoon of sugar or two - sketo, metrio or glyki. No milk is ever added.
